There are a few singleplayer scenarios that use a few mods along with the Ravage framework to make a solid survival experience. Option 2 is a bit more robust in terms of survival, but you're looking for the Ravage mod. It's made for Singleplayer, so feel free to tweak the difficulty so you stand a chance against bandits. There's a scenario on the workshop called DayZero that's kinda old (I think it's on version 1.4.4) that takes place in Chernarus and does a really good job of capturing that old DayZ feel.
